These swimming crabs are wild-caught in the Zhoushan sea area and frozen quickly to hold their ocean-fresh flavour. They arrive with hard, full shells and sturdy claws, packed with plump white meat that stays juicy through cooking.
Steam them simply, stir-fry with chilli and ginger, or braise with scallion — the shell holds the sweetness in. Keep frozen and cook soon after delivery; do not refreeze once thawed. Sold in 2.5 kg packs.
